Again, I got docked for portion size. My envelopes were a little more than bite-sized, and they were soggy by the time I served it all. But it was delicious, and Chef Ian liked it.  I used Krung Thep as the Thai city rather than Bangkok, mostly because I didn't want that 80s song going through my head all week.
